It was not a whim, ours: since childhood we have always known that a great cereal tradition dwelt in these hills and, in our genes, there has always been the intention to perpetuate it.

It was the year 1969 when my grandfather, Enos, received the Provincial 'Spiga d'Oro' award in Grosseto as part of the 17th National Competition between seed grain producers.

Since then, we have always nurtured the dream of returning to wheat processing and, two years after the first harvest, our PASTABIO is now released: a stone-ground, bronze-drawn and slowly dried pasta. A brand new, yet ancient pasta, high in protein and low in gluten, which is not heavy, but rather will amaze you with its warm flavour of sun and wheat and its delicately wrinkled surface, capable of holding the most elaborate sauce and enhancing, and exalting, the simplest, even if it is extra virgin olive oil and grated Parmesan cheese.

For the time being, with our fusilli we discovered that territory wins twice: priceless, the combination with an asparagus ragout and Enos I.

But that is another story.

PASTABIO: the taste of pasta

It first strikes the nose, awakening it with an ancient scent of malt, wheat grain and mill, hinting at the earth warmed by the sun, and there is even a touch of hay that can already be breathed in when, still raw, you open the package.

Just a few minutes of cooking and PASTABIO by Tenuta Montauto is ready.

A delicately burnished colour, indicative of patient stone milling and slow bronze drawing, prepares the senses for perception.

Penetrating it, one is struck, to the touch, by a peculiar consistency, a resistance perfectly distributed both at a superficial level and in the deepest part of the fibre. It is taut, fibrous and uniform and, on the tongue, returns a deliciously wrinkled, ear of wheat-like perception, perfect for retaining, on its surface, all kinds of seasoning.

In the bite, it is crunchy and compact and releases a malty aroma that, retrospectively, may remind one of coffee powder. To the taste, it is surprisingly flavoursome of wheat and cereals, and tasty to the point of requiring practically no salt during cooking, which makes it even more suitable for those wishing to maintain a healthy lifestyle.

It is a new yet ancient flavour.
