Vineyards
The grapes come from 15-year-old organically managed vineyards, treated only with copper and sulphur and fertilised with stable manure. The predominantly clayey and quartz-rich soils are located 200 m above sea level and 10 km from the coast, in a unique and uncontaminated terroir, characterised by significant temperature excursions between day and night.Plant

The grapes are selected and harvested by hand and placed in 18 kg crates. Harvesting takes place after the first ten days of September, exclusively in the early hours of the morning, to ensure a low temperature of the grapes on arrival at the winery.Vinification
Before being pressed, the grapes are placed overnight in cold storage in order to have a greater extraction of aromas and to avoid oxidation. The bunches are then softly pressed to obtain a 50% yield, followed by fermentation using the cold technique to enhance the wine's aromas and elegance. After 36 months of ageing on the lees, the wine can express its richness and identity. All the energy used during the production process comes from renewable sources.Wine
Straw yellow with antique gold highlights, the nose is extraordinarily fresh, with hints of fruit accompanied by pleasant, but not aggressive, yeast notes. Fine bubbles envelop the entire palate, in the mouth it expresses itself with great elegance, crisp, mineral and with good acidity.
