Vineyards
The vineyards are managed organically, treated only with copper and sulphur and fertilised with stable manure. The soils, predominantly clayey and rich in quartz, are located 200 m above sea level and 10 km from the coast, in a unique and uncontaminated terroir, characterised by significant temperature excursions between day and night.Plant
High spurred cordon with 3300 vines/hectare to provide shade for the grapes and to benefit from sea breezes.Harvest
When fully ripe, the grapes are selected and harvested by hand and placed in 18 kg crates. Harvesting takes place in the last ten days of August, from the early hours of the morning, to ensure a low temperature of the grapes on arrival at the winery.Vinification
The grapes, before being pressed, are placed overnight in the refrigerator in order to have a greater extraction of aromas and to avoid oxidation. The whole bunch is then softly pressed. This is followed by decanting for 36 hours and fermentation in stainless steel at a controlled temperature of 16°C. All energy used during the production process comes from renewable sources.Wine
Straw yellow with slight greenish reflections. The nose opens naturally and elegantly on aromas of exotic fruit (passion fruit) with mineral traces of flint. In the mouth, fresh and sharp, it leaves room for velvety and aromatic notes, with a savoury, harmonious and persistent finish.
