Vineyards
The grapes come from 15-year-old organically managed vineyards, treated only with copper and sulphur and fertilised with stable manure. The soils, predominantly clayey and rich in quartz, are located 200 m above sea level and 10 km from the coast, in a unique and uncontaminated terroir, characterised by significant temperature excursions between day and night.Plant

The grapes are selected and harvested by hand, placed in 18 kg crates. Harvesting takes place in the last ten days of August, from the early hours of the morning, to ensure a low temperature of the grapes on arrival at the winery.Vinification
Before being pressed, the grapes are placed overnight in the refrigerator in order to have a greater extraction of aromas and to avoid oxidation. The grapes are then softly pressed and decanted for 36 hours. Fermentation takes place in stainless steel at a controlled temperature of 15°C. Vegan wine. All energy used during the production process comes from renewable sources.Wine
It is straw yellow in colour. The nose initially reveals vegetal notes, followed by citrus scents and enhanced by mineral tones. The palate is full-bodied, fresh and pleasantly sapid.
