Vineyards
The grapes come from vineyards between 7 and 30 years old, organically managed, treated only with copper and sulphur and fertilised with stable manure. The soils, predominantly clayey and rich in quartz, are located 200 m above sea level and 10 km from the coast, in a unique and uncontaminated terroir, characterised by significant temperature excursions between day and night.Plant

When fully ripe, the grapes are selected and harvested by hand and placed in 18 kg crates. Harvesting begins in the first ten days of September, exclusively in the early hours of the morning, to ensure a low temperature of the grapes on arrival at the winery.Vinification
The grapes, before being pressed, are placed overnight in the refrigerator in order to have a greater extraction of aromas and to avoid oxidation. They are then softly crushed and decanted for 36-48 hours. The grapes are fermented without skin contact in stainless steel at a controlled temperature of 16°C. This is followed by cold stabilisation. Vegan wine. All energy used during the production process comes from renewable sources.Wine
Greenish yellow in colour, clear and with good consistency. The nose is assertive and has personality. Intense and persistent are the classic Vermentino aromas, including floral, vegetal and herbaceous notes. Overall, it is a wine with delicate and fine aromas. In the mouth is extraordinary acidity, which supported by a good softness, leaves the mouth balanced. Of particular note is the delicate savouriness and minerality that envelop the palate on the finish.
