Vineyards
The grapes come from vineyards between 10 and 15 years old, organically managed, treated only with copper and sulphur and fertilised with stable manure. The soils, predominantly clayey and rich in quartz, are located 200 m above sea level and 10 km from the coast, in a unique and uncontaminated terroir, characterised by significant temperature excursions.Plant

The grapes are selected and harvested by hand and placed in 18 kg crates. Harvesting takes place in mid-September, exclusively in the early hours of the morning, to ensure a very low temperature of the grapes on arrival at the winery.Vinification
Before being pressed, the grapes are placed overnight in cold storage in order to have a greater extraction of aromas and to avoid oxidation. After soft crushing and destemming, fermentation takes place in stainless steel vats at a controlled temperature of 18°C. Maceration on the skins lasts about 15 days, while the wine is aged for 20% in barriques and the remainder in stainless steel for about 10 months. Vegan wine. Un profumo profondo, che inizialmente rimanda al cioccolato per poi virare verso l’elicriso e i frutti rossi. A poco a poco si infittisce di sensazioni di bacche aromatiche, come di mirto, anche in foglia, cassis e radice di liquirizia e cardamomo. In bocca ha materia e acidità da vendere, è fresco e piccante, ricco di ritorni olfattivi agrumati.Match
A decidedly versatile wine, delicate and authoritative, easy to accompany both the succulent meatiness of a Chianina fillet and the meat of a free-range chicken, perhaps cooked on the grill. That said, Ciliegiolo also goes very well with certain shellfish, in tasty preparations such as Cacciucco or with stewed mussels. Still in stews, it will be an excellent companion for snails, whose minerality and incisiveness of flavour will be able to push through without succumbing.
