Vineyards

The grapes come from 15-year-old organically managed vineyards, treated only with copper and sulphur and fertilised with stable manure. The predominantly clayey, quartz-rich soils are located 200 m above sea level and 10 km from the coast, in a unique, uncontaminated terroir characterised by significant temperature excursions between day and night. Plant

Spurred cordon, with 4000 vines/hectare. Harvest: The grapes are selected and harvested by hand and placed in 18 kg crates. Harvesting usually takes place in mid-September, exclusively in the early hours of the morning, to ensure a low temperature of the grapes on arrival at the winery.

Vinification

Before being pressed, the grapes are placed overnight in cold storage in order to have a greater extraction of aromas and to avoid oxidation. The grapes are then softly crushed and destemmed, the juice is briefly macerated with the skins, followed by fermentation for 14 days at a temperature of 12°C, and finally stabilised by chilling. Vegan wine. All energy used during the production process comes from renewable sources.

Wine

Salmon pink in colour, the bouquet is persistent and floral, with hints of rose petal, and on the palate a perfect balance of savouriness, freshness and fruit returns. It goes well with all fish dishes, with not too rich first courses and white meats. Also highly appreciated as an aperitif. Temperature: 12-14°C Alcohol content: 12.5%
