\nWe have always considered ourselves non-conformists, but we find ourselves to be, today, much more so than we had imagined. We certainly were before, when everyone put Sangiovese 'because we were in Tuscany', little did it matter that it was a different Tuscany from the classic one. So, while Sangiovese raged everywhere, we continued with Sauvignon, which represented both the legacy of my grandfather Enos and a white grape nobility that was already at home here, at ease in this climate of wind, sea air and a stony land rich in pink quartz.<\/p>\n

That was before, because we find ourselves being non-conformist even today when we assert the reasons for artisanal wine instead of those for natural wine: we call it artisanal because for us, wine still represents an artefact and, as such, is perfected over time, with the evolution that we ourselves embrace and implement through culture, of and about wine.<\/p>\n

But there is more. Because we become even more non-conformist when we find ourselves defending characteristics of wine that are not always fashionable, such as cleanliness, sharpness, persistence, balance and terroir, above all, and I pay no attention to the grape variety, least of all if the wine in question boasts the 'native' alibi. We speak of an alibi for a precise reason: although the native grape does not always reach the levels of elegance and finesse lapped by the international varieties, this is forgiven by virtue of its spontaneity, its rustic legibility that is taken as an absolute quality even when this, or rather always, takes the place of the representation of the territory: it is native, it is said, its name is enough to speak for it and its territory and it matters little that this territory, in truth, does not exist in wine. On the other hand, international vines, which are also and not incidentally the vines from which the best wines in the world are born, are given the task of interpreting this territory, often to the detriment of the vine itself, as has already happened in Burgundy.<\/p>\n

That's why we don't believe in the absolute value of the autochthonous because I believe in the territory and that makes us, today and once again, non-conformists.<\/p>\n
